Our friends Raquel and Mo visited with us this past week. Aside from enjoying our local beaches, they took it upon themselves to provide us with 3 evenings of amazing home cooked meals. The backbone of two of the meals was local fish we purchased together from fisherman Miguel (Miki) down at Corcega Beach. Our lot: 3 nice snapper and a massive 8-pounder tuna (at $2 a pound, the tuna was a great deal!).
The first dinner we enjoyed was baked snapper with a side of salad and roasted vegetables. Next, Mo and Raquel prepared an amazing chicken paella, concocted with many lovely gourmet Zingerman products Mo brought along in a massive box of goodies. Finally, it was time for the tuna. Mo gallantly ‘butchered’ the massive fish, and the lovely red tuna pieces were enjoyed lightly seared by most of us (Nick prefers his tuna white) with a side of fresh greens and couscous.
It was wonderful to spend time with Mo and Raquel, but they have now set the bar high for any upcoming guests. Thanks guys!!! 🙂
